With the discovery that bread does not have to be made with commercial yeast, I wanted to know why. And why this global interest in sourdoughs. Granted, our country’s people like sweet and soft breads. Actually, everyone in my family likes sweet and soft. So why should they or anyone make the switch to sourdoughs or clean breads? So I asked, why not?
Meanwhile, I pretty much force fed members of my family sourdough for weeks. After a couple of weeks of polite “yes, it’s good”, slowly they realised they do not feel bloated after snacking on sourdough (not by choice) for teatime or supper.
Which made me delve more more into the science of sourdough. Why do people in the West swear by sourdough’s health benefits? What benefits are they?
