Fascination with Natural Bread

Bread was just bread. Sweet buns. Baguettes. Sandwich loaves. Savoury breads. Nothing fascinating.

 

Until out of curiousity I went for a bread making class to try my hand at holey moley breads. the type that when you show others your crumb, all the “oooos” and “ahhhhs” are heard. And I found myself saying the “oooos” and “ahhhhs” myself.

Not just marvelling at the holes, but at the flavours! My curiosity ate at me for the next 10 days or so, until I went for my next class. To discover not only how to achieve the wonderful flavours I experienced from the high hydration sourdoughs, but to learn about the how what when where of things.

 

Bread was no longer just bread.
